(N)ice Cream

When I was younger, I was the most unhealthy eater ever. I ate pretty much everything and anything for breakfast, you name it: pasta, leftover cake, cookies, steak, and of course, ICE CREAM. Things have changed since I scrambled for the 8:00am bus everyday in the third grade. I’m still scrambling but I’m not eating ice cream for breakfast, rather, NICE cream.

Over the course of the past week, I’ve grown accustomed to the taste, but I can’t get enough of the “ice cream for breakfast” idea. The only thing keeping me from having it everyday is the fact that there are probably not enough bananas in my local markets to supply for my addiction. Anyway, here’s a glimpse into what I’ve been eating pretty much every morning.

T H E  R E C I P E



  1. At least 24 hours prior to the actual making of the ice cream, make sure you freeze about 4-5 bananas.
  2. When you’re ready, blend the frozen bananas, acai, and some almond milk in a food processor. (It will take a bit for the bananas to blend and smooth through!)
  3. After the base is done, scoop it into a bowl.
  4. Top off with whatever you want. I put in chia seeds, cacao nibs, raspberries, and granola.

***There is a ton of leeway with this “recipe” all you really need is frozen banana…then you can put whatever fruits you want in or on top but this is just what I did! 🙂 ***
