Over the past few months health foods have really grown on me. Quinoa being one of them. While there are billions of succulent quinoa recipes out there (AKA my Pinterest food board), this is my all time favorite way of incorporating rice’s healthier sister into my meals. Keep reading for a hearty, healthy, and vegan quinoa bowl.

- Quinoa: Start by stirring the quinoa into boiling water and let it simmer in a covered pan for 15 minutes or so. You’ll know when it’s done when all the seed things have cracked and absorbed the liquid. Quinoa isn’t the most flavorful so adding a little olive oil, salt, and pepper will enhance it. (While the quinoa is cooking, move onto cooking the rest of the ingredients)
- Cooking the veggies: The best part about a quinoa bowl is that you can put whatever you want in it: meat or veggies, or both. However, since this is a VEGAN recipe we’re going to stick to veggies. You can use any veggies you like (Ex. broccoli, carrots, etc) but I stuck with sweet onions, mushrooms, and peppers. Cook the veggies (how you like it) or you can sauté them with olive oil and pepper like I did. Keep in mind that majority of the flavor comes from the veggies 🙂
- Voila: Yes, it’s that easy. Just whip out the quinoa and dump your nutritious veggies on top and finish it off with a bit of basil for extra flavor.
As you can probably tell by now, there’s a lot of leeway with designing a quinoa bowl. You can adjust the recipe to however way you want but this is just how I like to have it.
